What are my options for holding rings on my lathe?
Not a lot.
Either use an existing mandrel for rings if it'll fit your lathe bed like I do, make your own, or buy one from the states.

One traditional way is to turn a piece of wooden dowel to a 5° taper so that the ring can be wedged on. However as the ring becomes hot it will also loosen, so there is some juggling to be done to keep the ring pressed home.
Alternatively you can use an internal ring clamp, or adapt a stepped ring stretcher as recently suggested by Josef.
The latter being made of metal will dissipate heat and compensate for heating by expanding too.
