How can I stop a previously soldered joint from melting when I have to solder a joint close to it. Is there a 'compound' that I can put on it to protect it from the heat.

The best way is to use a lower temperature solder, even extra easy. Compounds and pastes tend to stop the metal getting hot enough.
Tippex, pencil graphite, rouge, yellow ochre will all stop the joint from flowing, depends on the setup as to whether they're suitable.
Careful torch control with a fine tip (or 2 torches even - one to get things nearly to heat, the other to heat around the new joint) might solve things.
Depends, really.
