Hello Annie,and welcome to the forum. You don't say what pickle you are using or how hot it's getting.
If it's lemon juice, or vinegar, particularly if not heated much, then it might well be a mould.
If it's alum or safety pickle, it will be crystals forming as the water evaporates. The water can be replaced
In either case, I see nothing wrong with using it if it still works. Dennis.
Hello Dennis! Thank you for your answer, It’s safety pickle from CooksonGold, in my understanding it is somehow food grade, I haven’t used for some time 2 weeks, but when used I heat it up to 80 degrees in a mug warmer. :)
Well don't worry about it. Just keep using it until it stops working.

As I understand it their safety pickle is basically citirc acid, hence it having a food grade. I use critirc acid and get those floaty bits too, it does appear to be some kind of mould that forms when you've not used the pickle for a while. It doesn't affect how it works, just gets annoying, floating around like some kind of ghost. When it bugs me too much I just pour my pickle through a sieve and get rid of the ghostly stuff.
I am also able to spell citric, just not earlier today....
This got me curious as I couldn't see how mould could grow in citric acid - I found this in a photographic forum - looks like a bacterial contamination maybe?

Look up Aspergillus Niger, you may be surprised.
Surely that would be a black mould though and I'm not sure it would survive the production process?Quote:
